Here are a few of my Barbeque and Grilling Tips
1) Smoke
You can add a lot of flavor to your food prepared on an outside gas grill by using woodchips. I posted a tip a while back about how to do this:

This can be one of the biggest problems for people grilling foods such as chicken. To get chicken to the recommended temperature to kill in bad germs, you usually end up with dry, overcooked chicken. A simple solution is to either boil or pressure cook (much faster and usually tenderer) the chicken first. Then grill it add the grilling flavor and color. You might also try precooking it, and then placing it in a sauce to soak before grilling. This can add a lot of flavor and still end up with moist, flavorful chicken.
People will wonder how your chicken is so moist and tender when you grill it!
3) Bread

Depending on the type of grill you have, food can flare up and cause some serious flames. To help with the problem, just keep a spray bottle of water close to your grill and use it on the flare-ups when they occur. You must be careful though as flare-ups are usually caused be fats catching on fire.
5) Keeping Moisture while cooking
At times, you may want to keep the moisture level in your grill high to keep food from getting too crunchy. A simple method is to either put a tin can with water on the grill next to what you are cooking (assuming the lid will be closed) or you can line the bottom of your grill with aluminum foil and bend it in such a way that it makes a container to hold an inch or so of water. Fill it up when you start and it should help keep moisture in your grill.
6) Cleaning

I make sure not to splatter water on the gas element. Be warned though, it does generate a lot of splattering and can cause injury if you are not careful.
